Creamy Ham and Penne Pasta

CREAMY HAM AND PENNE PASTA

INGREDIENTS:

  • 1 pound penne pasta, uncooked
  • 2 cups frozen baby peas
  • 2 cans (14.5 ounces each) fire roasted diced tomatoes, undrained          
  • 2 packages (8-ounces each) cream cheese, cubed
  • 2 cups shredded sharp cheddar cheese
  • 1-1/2 pounds (3 or 4 cups) fully cooked ham, diced

DIRECTIONS:

1. Cook pasta according to package directions, adding peas the last 3 to 4 minutes of cooking time. Drain
    well in colander.
2. In large saucepan, combine all remaining ingredients. Cook and stir over medium heat until cheese
    melts and mixture is bubbly.
3. Stir in pasta and peas. Serve hot.

Tips:
For a zestier sauce with more heat, try using Ro*Tel® Diced Tomatoes & Green Chilies, instead of fire roasted.
To make the ham flavor more pronounced, pan fry to slightly caramelize.
