Roasted Ranch Potatoes with Bacon and Cheese



Like so many others, I often find myself browsing Pinterestfor inspiration when seeking new recipes to try. One of my boards is entitled, “Absolutely Must Try,” where I pin recipes I want to revisit when I have the time to prepare. This is one of those recipes. It just looked too good not to try, and I am so glad I finally got around to it. There was absolutely nothing disappointing about this dish. Of course, if you’ve been following my blog, you know that I love bacon, and I love cheese. So, needless to say, I had to increase the ingredient quantities for both. But, other than that, this recipe went above and beyond my expectations and has even become a permanent addition to my recipe box. Mike raved about this. Many thanks to Joyously Domestic for peaking my interest with this one. This is an “absolutely must try” recipe for everyone!


Preheat oven to 350° F. Spray a 9x13" baking pan with cooking spray.

Scrub potatoes. Cut into cubes, unpeeled. Cook and crumble bacon.


In large bowl, mix together ranch dressing, dill, cheese and bacon. Add potatoes.
Season to taste with salt and pepper. Toss to coat.


Spoon into prepared baking dish. Cover with foil.


Bake for 60 minutes, stirring halfway through cooking time to rotate potatoes and keep from sticking.

Remove foil. Gently stir potatoes again. Increase oven temperature to 400° F.
Bake for 15 minutes. Sprinkle on more cheese. Bake until cheese melts.
Sprinkle scallions on top for garnish. Can be served with a dollop of sour cream.

INGREDIENTS:

  • Non-stick cooking spray
  • 2 pounds potatoes (unpeeled, scrubbed and cut into cubes)
  • 1/2 cup ranch dressing (bottled, not packet)
  • 1 Tablespoon dried dill weed
  • 1 cup shredded cheddar cheese             
  • 1/2 to 3/4 cup cooked bacon, crumbled
  • Salt, to taste
  • Ground black pepper, to taste

Topping:
  • 1 cup additional shredded cheddar cheese
  • 3 to 4 scallions (green onions), washed and thinly sliced
            
DIRECTIONS:


1. Preheat oven to 350°F. Spray a 9x13" baking dish with cooking spray.
2. In large bowl, mix together the ranch dressing, dill, cheese and bacon.
3. Add potatoes. Season to taste with salt and pepper. Toss to coat potatoes.
4. Spoon into prepared baking dish. Cover with foil.
5. Bake for 60 minutes, stirring halfway through to rotate potatoes and keep from sticking.
6. Remove foil. Raise oven temperature to 400 degrees. Gently stir again, as necessary.
7. Bake for an additional 15 minutes, then sprinkle on1 cup additional cheese.
8. Continue baking until cheese is fully melted.
9. Sprinkle scallions (green onions) on top for garnish. Can be served with a dollop of sour cream.

Serves: 4

  7. Nice to find your blog through the linky party. These potatoes are going directly on my "Must Try Soon" board on Pinterest. I really like the fact that this is made with liquid dressing. I've seen some that are made with dry ranch, which I think dries out the potatoes. Thanks for sharing the recipe.
