Santa's SNICKERS® Brand Surprises


Peanut Butter Cookies with SNICKERS®


This time of year I am so grateful for my stand mixer. Yes, that means this past weekend I officially started my holiday cookie baking. That’s usually a week-long project for me, so on my blog this week I will feature a new cookie daily. Actually, my holiday baking is a little non-traditional. By that, I mean I don’t bake sugar cookies or peanut blossoms. But, I have a good reason for that. We don’t keep the cookies I bake, we give them away. I figure everyone else already has these cookies in their house, as it is probably part of their own family tradition. So, instead, I prefer to offer a variety that they wouldn’t be baking themselves this time of year; meaning, the recipes I will be sharing with you this week will be cookies you can enjoy anytime during the year, not just at Christmas time. I started with a favorite of our oldest granddaughter. She calls them Snickerdoodles, but they’re really not. They’re actually peanut butter cookies with a secret surprise inside….a SNICKERS® mini candy bar. Then they are lightly dusted with powdered sugar, and drizzled with melted chocolate. 
 
Only 1 bag of SNICKERS® shown, but you will need more.


In medium size bowl, sift together flour, baking soda and salt.


Combine the butter, peanut butter and sugars using a mixer on a medium to low speed until light and fluffy.




Slowly add eggs and vanilla, until thoroughly combined. 


Add flour mixture, a little at a time, mixing on low speed after each addition. 



Increase speed until dough forms.




Cover and chill dough for 2 to 3 hours.


Preheat oven to 350° F.  Grease a cookie sheet (or spray with non-stick cooking spray).


Unwrap SNICKERS® minis. Quantity of SNICKERS® needed will depend on size of cookies being made. I usually just unwrap 12 at a time until dough is used up. You won’t need 2 bags, but you will need more than what is in 1 bag.


Remove dough from refrigerator. Divide into approximate 1 Tablespoon pieces and flatten. I use about 1-1/2 Tablespoons per cookie; it’s easier to wrap the candy fully.


Place a SNICKERS® mini in the center of each piece of dough. Form the dough into a ball around each SNICKERS® mini.



Bake for 14 to 16 minutes. (Baking time may need to be adjusted if using more than 1 Tablespoon of dough per cookie.)


Cool cookies on baking rack.


When all cookies are baked and cooled, dust lightly with powdered sugar.




In small bowl combine 1/2 cup semi-sweet chocolate chips with 1 teaspoon oil. Microwave on high for 1 minute. Remove from microwave. Stir until chocolate is completely melted.



Pour chocolate into resealable plastic bag. Snip off tiny hole in corner to drizzle glaze (or use spoon to drizzle). If you don’t have enough chocolate for all the cookies, just repeat procedure and make another batch.


I usually chill cookies until chocolate glaze is set, before storing in airtight container.

Makes approximately 3 dozen, depending on size of cookie.

  • 1 teaspoon vegetable oil

DIRECTIONS:

1.   Combine the butter, peanut butter and sugars, using a mixer on medium to low speed until light and
      fluffy.
2.   Slowly add eggs and vanilla until thoroughly combined. Then gradually mix in flour, salt and baking
      soda, until dough forms.
3.   Cover and chill dough for 2 to 3 hours.
4.   Unwrap first bag of SNICKERS® Brand Miniatures. You will need part of the 2nd bag, but not all, so
      only unwrap what you will need.
5.   Remove dough from refrigerator. Divide into 1 Tablespoon (or slightly more)  pieces and flatten.
6.   Place a SNICKERS® Brand Miniature in the center of each piece of dough.
7.   Form the dough into a ball around each SNICKERS Brand Miniature.
8.   Place on a greased cookie sheet and bake at 350° F. for 14 to 16 minutes (depending on size of
      cookie).
9.   Cool cookies on baking rack.
10. Lightly dust cookies with powdered sugar.
11. In small bowl, combine 1/2 cup semi-sweet chocolate chips and 1 teaspoon oil. Microwave on high
      for 1 minute. Remove from microwave and stir until chocolate is completely melted.
12. Pour melted chocolate into resealable plastic bag. Snip off tiny hole in corner of bag to drizzle glaze
      over cookies (or use a spoon to drizzle).
13. Refrigerate until chocolate is set, then store in airtight container.
